MAKE YOUR SWEETHEART A VALENTNE'S DAY VEGAN DESSERT


You don't have to give up your diet or health-conscious eating habits
 because it's Valentine's Day.We have some vegan recipes.

1/3 cup water
2 T. agar-agar flakes
1 2/3 cups white organic strawberry juice
1 cup organic strawberry, washed well and cut in half







 

In a small saucepan, stir together the water and agar-agar flakes, and place over medium heat. Bring the mixture to a boil, reduce heat to low, and cook while stirring constantly for 5-10 minutes or until the agar-agar is thoroughly dissolved. Place the strawberry juice in a glass bowl, add the agar-agar mixture, and whisk well to combine. Place in the refrigerator, chill for 30 minutes or until partially set; gently fold in the strawberry, and chill for several additional hours or until totally gelled. Serve in small individual glass dishes, or transfer to small individual airtight containers for transport.
*Variation - try substituting other types of fruit juice or sliced fruit, such as berries, cherries, apples, or pears. Citrus fruits and pineapple sometimes react differently with the agar-agar so trying mixing them with other types of fruit for proper gelling.

Best Valentine's Day DessertsFull Dozen Giant Dipped Valentine's Berries

Ingredients
  • 5 ounces VEGAN bittersweet OR DARK chocolate, chopped
  • 1 pint fresh strawberries with leaves
Directions
  1. In a microwave-safe bowl, or in the top of a double boiler over simmering water, cook chocolate until melted. Stir occasionally until chocolate is smooth. Holding berries by the stem, dip each one in molten chocolate, about three-quarters of the way to the stem. Place, stem side down, on wire rack and chill in refrigerator until hardened.



GRANDMA-RG-VEGAN VALENTINE'S-CAKE
  • Ingredients

    • 1 (18.25 ounce) package VEGAN cake mix
    • 1 (12 fluid ounce) can white frosting
    • 1 (18 ounce) jar strawberry glaze
    • 1 pint strawberries, hulled

    Directions

    1. Preheat oven according to package directions.
    2. Prepare cake mix as directed; lightly grease heart-shaped pan.
    3. Pour cake mix into pan and bake in preheated oven; let cool.
    4. Ice cake with white frosting and pipe frosting around bottom and top edges of cake with cake decorator tips to form a ridge. Spread strawberry glaze on top of cake and decorate with strawberries around edges; use your imagination as you go.

  • 1 (18.25 ounce) package VEGAN cake mix
  • 1 (4 ounce) jar maraschino cherries
  • 3/4 cup chopped pecans
  • 1 (16 ounce) container frozen whipped topping, thawed

Directions

  1. Drain the cherries reserving juice; chop cherries and reserve.
  2. Prepare VeGAN cake mix according to box directions, adding water to the reserved cherry juice to equal the amount of liquid needed for cake mix.
  3. Preheat oven to box directions.
  4. Fold the cherries and pecans into the cake mix; stirring by hand. Pour mix into 2 round cake pans and bake in preheated oven.
  5. When cake has completely cooled, frost with whipped topping; serve and keep unused portions in refrigerator.
